Quick & Easy Taco Salad

I love when things in life can be simple and easy, especially when it comes to dinner ideas for my family! If I can have a meal ready in under 30 minutes- that’s a success for me!

Taco salad is a go to meal in our family as it’s as quick and easy as making tacos. I can have dinner ready in under 30 minutes and it’s a meal that everyone enjoys!

Ingredients:

1 pound ground beef (for our family of 2 adults, 1 toddler)

1 packet Taco Seasoning Mix

Large flour tortillas

Lettuce (you can use any kind you prefer, I use pre-shredded bags to save time)

Tomato

Shredded cheese- fiesta blend

1 can refried beans (2 cans recommended for 4 or more people)

Sliced black olives (optional)

Avocado/Guacamole (optional)

Sour cream (optional)

Onions (optional)

Salsa (optional)

Directions:

1. Cook ground beef with taco seasoning mix according to directions on the package

2. While beef is cooking, heat oven to 400-415 degrees. Place 1 tortilla in a taco salad shell mold (you can get a pack on Amazon for under $20) and place molds in the oven. I can usually fit 4 molds easily in the oven at 1 time. Cook until brown and crispy.

*If you don’t have a taco salad shell mold you can create your own with either an oven safe bowl or ramekin. Place the tortilla in the microwave with a wet paper towel for 20 seconds until the tortilla is warm and soft. Place the tortilla inside the bowl and press down to fit it to the shape of the bowl.

3. Heat the refried beans in a microwave safe bowl for 1-1 1/2 minutes or until warm.

4. After the ground beef is cooked and the shells are ready, you can begin assembling your taco salad. There are no rules at this point, however you want to make them is fine!

My taco salad typically consists of the following:

I fill my taco salad shell with refried beans as the first item. On top of the beans I put some ground beef. The beans help keep the ground beef in place. Next I add lettuce, tomato, and cheese to make the salad on top.

I personally like to add sliced olives and sliced avocado to mine. You can also add guacamole, sour cream, and/or salsa if you want some additional flavors.

At our house we serve it with a side of chips (black bean garlic are our favorite!) and salsa. There are a lot of ingredients that go into the taco salad that make it a meal in it’s own, which makes dinner rather quick and easy for me. While everything is cooking I take the time to wash and cut the other ingredients. You can also serve with a side of Spanish rice if you want a side item to go with it.
